Making Healthy Lunches Fun and Festive

As a mom who dramatically changed my own eating habits last year, I find it very important to pass healthy eating habits on to my children as well. Sometimes it can be so easy to throw a prepackaged meal into my kids lunch, but then the mom guilt sets in and I always regret not taking the time to make my kids' meals mean something when they open them up each day. Here are some fun and festive ideas for packing school lunches that you can make for your children and still provide a healthy well balanced meal.

Brown rice, hard boiled egg, cheese slices, mango chunks, broccoli, and tomatoes


Think outside of the box when it comes to lunches. The days of boring sandwiches are behind us! At the beginning of the week, or the night before, I sometimes prepare a batch of brown rice, cooked in a small amount of low sodium soy sauce, and mold it into a shape using a large cookie cutter. Make it fun by adding some chopsticks instead of a spoon. This is also a great way to teach children about the customs of other cultures.

Homemade pizza: flour tortillas, shredded mozzarella cheese, homemade sauce, pepperoni, and unsweetened applesauce


Most kids love pizza! In our house, instead of buying the prepackaged pizza lunch kits, we make our own. Using a large cookie cutter, cut flour tortillas into fun shapes and bake for about 5 minutes or so in the oven. Make your own pizza sauce using tomato sauce, tomato paste, and a few spices like garlic. Add pepperoni, cheese, and even veggies if you wish, and your child can build their own, healthier, mini pizzas at school every day.

I try to keep the food pyramid in mind when preparing my kids' lunches. A variety of fruits, vegetables, grains, protein, dairy, and healthy fats are what make a well balanced meal. And whether it be peanut butter, salsa, or even hummus, providing a dip is always a great way to get kids to eat their veggies, even when parents aren't around. Making your own homemade dips can be quick and simple. I always prefer homemade over prepackaged foods since so many foods now have added sugar that I don't want my children to have.

Don't forget that even the drink you provide doesn't have to be filled with tons of added sugar or high fructose corn syrup. We all know water is the best for our bodies, but sometimes kids want something more. Kids are kids, do we blame them? That's why I love these new ready to drink Fruitshoot juice drinks. Quick & Simple St. Patrick's Day Snack for Kids: Gold Coins

Let me just go ahead now and say that I have no idea why these are called "gold coins". This is a snack that we made for the kids every year for St. Patrick's Day, when I worked in childcare, and the kids loved it. I have been making it for my kids every year since then and it has sort of become a tradition to make them every year at this time.

This is a great snack for kids to make themselves also. We used a regular knife to cut the banana, but if you aren't comfortable with your little one using a regular knife or a butter knife, using a plastic knife is of course fine too. I have been allowing Elijah to cut with a knife, while I supervise him, and it has been an excellent time to talk to him about the safety of handling the knife, and the dangers of mistreating it as well.

Gold Coins

You will need: 
  • Ritz crackers
  • Bananas
  • Honey
  • Rainbow sprinkles

Cut the banana into slices. Place one slice on top of a Ritz cracker, drizzle it with a bit of honey, and top with rainbow sprinkles. Enjoy!

Please be mindful that honey is not for children under age 2.  This can easily be made without the honey, which is what I did for Elijah when he was younger.

halloween dirt cups

i shared these dirt cake cups as a guest post last year over at sunny with a chance of sprinkles and thought that since it's a new year, i would share it here as well. my kiddies have already been asking me for these, so i see them in our near future.

one of my kids favorite treats is dirt cake cups. just like my rice krispie treats, I usually follow the basic recipe and tweak it for specific holidays. here is the basic recipe and two great ways to dress it up for halloween.

-chocolate or vanilla pudding
-oreo cookies (or any type of cookie such as graham crackers, vanilla wafers, etc.)
-cool whip (optional)
-food coloring
-canning jars (small size)
-gummy worms (or any type of decoration to finish off the cake)

prepare the pudding according to directions on the box. in a food processor, grind up cookies to a "dirt" consistency. in a separate bowl, mix cool whip with food coloring of your choice. in the canning jars, layer the ingredients, starting with the pudding, then the cookie crumbs, and lastly, the cool whip. continue to alternate ingredients until the jar is full. be sure that the last layer to fill the jar is the "dirt" on top.

for the first one, i just simply used chocolate pudding and halloween shortbread cookies. i layered them in the jar and topped it off at the end with one of the cookies.

the second dirt cake cups were made using chocolate pudding, chocolate on chocolate oreo cookies, and cool whip with orange food coloring. i topped them off with a plastic spider and mouse.

i think this one would have also looked great topped with a candy corn pumpkin. it would have even worked with the traditional gummy worms and a few plastic spider rings. the ideas are endless.

dirt cake cups are very inexpensive to make and are sure to please. sometimes changing up a simple recipe to make it "new" is all it takes to put a smile on your little one's face. I look forward to making these again at christmas and changing them up again to create a winter holiday theme.

summer treats: strawberry banana lickity splits

we always do several craft projects every summer while the kids are on break from school, but this year i wanted to incorporate more food projects that allow my kids to make and create their own fun snacks. last week we started the summer out by making s'mores over an open flame in our fire pit. this week i wanted to try an alternative to one of our favorite desserts, ice cream sandwich cake. my dad introduced me to this cake for the first time several months ago. my dad has never been one to get in the kitchen, so i knew this was a pretty easy treat if he could make it.

usually the ice cream sandwich cake is a very chocolatey dessert. however, i decided to change it up a bit this week by adding fruit and making it a cross between a strawberry shortcake and a banana split. to give each person their own individual serving, each person received their own little canning jar to build their treat. we call it strawberry banana lickity splits.

i could definitely see myself serving these at a party. not just a party for kids, but for adults too!

strawberry banana lickity splits (per jar)
  • homemade or store bought icecream sandwich
  • COOL WHIP Whipped Topping
  • sliced strawberries
  • banana slices
  • small canning jar

ahead of time, slice strawberries and place in the refrigerator. next, remove the ice cream sandwich from the package and cut into about six pieces. fill the bottom of the canning jar with the pieces of ice cream sandwich and put into the freezer until ready to serve.

once you are ready to serve, add a scoop of COOL WHIP to the jar, on top of the pieces of ice cream sandwich, then top with strawberries and bananas.

add a spoon and serve!

this simple recipe was certainly a big hit at our house! it is so simple for my little ones to prepare themselves... even elijah.

quick tips: puree a few of the strawberries and add a little of your favorite sweetener, then mix with the rest of the strawberries and add on top of the COOL WHIP. yum!

frozen, COOL WHIP makes a tasty treat similar to ice cream.  you can even change this recipe up each time by adding different ingredients on top of the COOL WHIP. the toppings are endless!

several weeks ago i bought a cake pop maker on a whim. i was actually christmas shopping for others and bought myself a gift instead. i finally got it out and used it yesterday.

top 3 tuesday - in the kitchen

i don't love to cook. i like to cook, i will cook, but i don't love it.  but i love kitchen stuff. dinnerware, cute little gadgets...that kind of stuff.

i think whether your food comes from a can or if it is prepared homemade, the way you present it can really make a difference.

fishs eddy is a great place to get solid white dinnerware.  i prefer solid white because it never goes out of style.  i also love their collection of vintage looking glassware.

I ♥ Pizza

Over the weekend, my children and I made the cutest mini Valentine pizzas. I used my heart cookie cutter to cut the pizza dough into the heart shapes, and then Red had the most brilliant idea to cut the pepperoni into little hearts using the heart that came with my tiny Pampered Chef cookie cutter set.

We made a larger square pizza also and decorated it with the rest of the mini pepperoni and some other yummy veggies. We had the silly idea of calling it our "Olive You!" pizza.
