It's Super Bowl Time!
The {Carolina Panthers} had an awful year in football, but that is not going to stop me from enjoying the Super Bowl. We will be pulling for the Colts again this year, as they attempt to go for the glory once more since 2007. Hopefully next year Carolina can come to their senses and realize that there are a few people on their team, Delhomme, that may need to be packed up and shipped off. And isn't it a little ironic that now that he isn't a Saint, they are in the Super Bowl? Things that make you go Hmmmmm! Okay, so it's been awhile since he left and maybe not that ironic. I was just trying to stir a little something up! :)
I {love} the game, I {love} the commercials, I {love} the half-time show, and I definitely L♥VE the snacks!
Here are some recipes to enjoy at your Super Bowl party.
Remember: Quantities are large to accommodate a large group of people.
Spicy BBQ Wing Sauce
48 chicken wings (about 8 lbs.)
1/2 cup butter, melted
3/4 cup bottled hot sauce
2 1/2 tbs. paprika
1 tsp. salt
1 tsp. cayenne pepper
- cut wings at joints to form 96 pieces and place in a resealable plastic bag.
- stir together the melted butter, hot sauce, paprika, salt, and cayenne pepper, and then pour over top of the wings. Seal the bag.
- Let marinate for 30 minutes at room temperature.
- Place on broiler pan and let broil for about 10-15 minutes or until slightly golden. Turn wings over and broil for an additional 10-15 minutes or until chicken is no longer pink on the inside.
- For "saucier" wings, brush on more of the marinade during broiling time.
- Serve with carrot and celery sticks and ranch or blue cheese dressing.
Homemade Salsa
3 large tomatoes
2 large green peppers
1 large onion
fresh cilantro (add according to your liking)
1 tbs. minced garlic
3 tbs. lemon juice
1 tsp. salt
1 tsp. pepper
Cut tomatoes, green peppers, and onion and place in a chopper. Mix for 5 seconds. Add remaining ingredients and mix according to your liking. Less time makes a thick and chunky salsa. More time makes a thinner salsa. Serve with tortilla chips.
