Sometimes if my kids just have something to dip those "disgusting" veggies in, they will eat them. I have seen Pea dip some strange things in ketchup...orange slices are just one item. Uck!
I could always give them some of the bottled varieties of dips such as ranch, ketchup, mustard or BBQ sauce, but I am a firm believer in variety and getting my kids to try new things. Try this recipe with some green beans, zucchini slices, baby carrots or any other veggie of your choice. You can also serve them raw or cooked.
Lemon Dill Dip
1 cup plain yogurt
1/3 cup chopped fresh dill (or 1 1/2 tbs. dried)
1 tsp. grated lemon zest
1 tbs. lemon juice
salt and pepper to taste
1 cup plain yogurt
1/3 cup chopped fresh dill (or 1 1/2 tbs. dried)
1 tsp. grated lemon zest
1 tbs. lemon juice
salt and pepper to taste
Stir ingredients together in a small bowl. Chill until ready to serve.
Update: I made this tonight and since we were having lemon dill chicken with it, I added a little bit of Splenda to sweeten the dip a little and used it as a dressing to go over a green salad. Delicious by the way, and since I added a little sweetener, it wasn't too overpowering to have both lemon flavors in the same meal. I plan to take the rest of the yogurt and lemon I have left to make raspberry lemon yogurt in the morning for the kids.
Lemon Yogurt
1 cup plain yogurt
1 tsp. lemon zest
1 tbs. lemon juice
1 1/2 tbs. Splenda (or sugar)
*1/3 cup raspberries (blended in blender)-optional
1 tsp. lemon zest
1 tbs. lemon juice
1 1/2 tbs. Splenda (or sugar)
*1/3 cup raspberries (blended in blender)-optional
I will be adding raspberries to mine but you don't have to. Leaving it as just a lemon flavor is yummy too. Lemon yogurt is one of my favorite flavors (actually, lemon flavor anything is, especially lemon candies).
Niether lemons, nor dill, are in season right now, however, I was wanting some lemon dill chicken terribly. Remember this if you decide to make this meal during this time of year and find prices for these items a little high. Luckily, you only need one lemon and about 1/2 cup of dill to make both of these recipes I have above. Be sure to utilize your resources when you buy so that you are not throwing away your money. I purchased two lemons and was able to make the lemon chicken, the dip, and will make the yogurt tomorrow, with no food waste.
