another week with lots of successes for me. as of today, i am 4 days shy of my goal of working out for 30 days consecutively. by this time next friday, i have celebrated my 30 days and sailed on to my new goal of 45 days.
in addition to this upcoming goal, i am excited to say that i officially hit a weight loss of 10 lbs. this morning when i checked my weight. and, as if that wasn't exciting enough, i got up and went running this morning and finally met my goal of being able to run a full mile without stopping. on the path i run, it is a slight downhill run as i head out. the downhill is so slight that i don't even really notice it until i am coming back and have to basically run up hill the entire time. there is also a second big hill before i actually turn around to come back. it can be tough on a hot day, but i like that when i turn around, i have a bit of a coming back down. once i get to the bottom of that hill and have to start coming back up that long incline back to my house, is when i usually tire out and have to slow down to walk a bit.
BUT NOT TODAY! I TOTALLY KICKED BUTT!
to some a one mile run is no big deal, but for someone like myself, who hasn't been running in a long time, has struggled with knee issues, and has gotten so out of shape, a success like this is major. we all started out somewhere. this is my start.
even with these successes, i still know that i have a ways to go before i get to where i want to be with my body. in the beginning, i honestly thought that this would just be another failure in my books, so i didn't even think to take my measurements. but, i decided to take them this week and here they are below.

right arm: 14.5
left arm: 14.5
right thigh: 26.5
left thigh: 26.5
upper waist: 34
lower waist: 36
hips: 40.5
i feel a little embarrassed about these numbers but i know that the efforts i am putting forth will only improve them. not to mention that sometimes it really isn't about the numbers, because i feel better than i have felt in a long time.

i always share some of the foods i have been eating so, how about a recipe this week. i have been making this as a afternoon snack for myself but, my kids love it too. it is supposed to be a healthier version of disney's pineapple whip, but since i have never had that, i can't really say how close it is. the original recipe is from around my family table, however, i changed it up a bit to use what i had around the house.
pineapple whip
ingredients:
- 1 pineapple, peel and core, and then dice and freeze
- 1/2 a lime, juiced
- 1 tablespoon, honey
- 3/4 cup, unsweetened almond milk
- 1/4 teaspoon pure vanilla
pull the pineapple out of the freezer and let it thaw for about 20-30 minutes (about halfway). put everything in a blender and blend until smooth. the original recipe says to put the blended mixture in an ice cream maker and follow the manufacturers instructions for making ice cream, but i find that this recipe is good enough for me, as well as quick, unlike having to wait for it to finish in an ice cream maker.
not only is this super delish, but it is also a clean food made only with all natural ingredients. it's so good and sweet that i actually start to feel guilty when i eat it, and then i remember that it is good for me. let me know if you try this. i would love to know what you think!
