Almost everyone has probably seen the "recipe" going around for 2 ingredient pumpkin muffins, but I am actually fairly new to this little shortcut... like, a couple weeks new to it! I usually make my own homemade muffins, but tried the 2 ingredient way a couple weeks ago. The kids were pleased and I spent a little less time in the kitchen. However, if you know me, then you know I like to do my own thing. 2 ingredient pumpkin muffins? Psh, I can do better than that! So, I have been experimenting and coming up with some of my own muffin creations, while also having fun along the way.
The original 2 ingredient muffins can be found here. Two of my favorite creations have been chocolate chocolate chip pumpkin and peanut butter banana. I plan to experiment further for new ideas. What do you suggest?
I got these cute Wilton silicone muffin pans a couple of years ago, for around $.50 each, when everything was deeply discounted, right after Halloween. I actually forgot I had them until recently and made sure I kept them out where I would remember to use them. Sometimes it's the little things that turn an ordinary muffin into something fun! I can make these same exact muffins at Christmas and use one of our Christmas muffin pans and suddenly the kids think they taste "different", and even "better". Mom magic!
Speaking of Christmas, I already have ideas for muffins then too! Cranberry sauce muffins! Egg Nog muffins! How do those sound to you?
