Super Simple Recipe - Tomato, Avocado, & Mango Salsa

 At least once a week we have Mexican food for dinner. Out at a restaurant or at home, we enjoy either tacos, quesadillas, or taco salad.  Truly my favorite food!  And, you can not have Mexican without the salsa.  As I left work today, someone mentioned mango salsa...which I do LOVE...just not with tacos.  But, mango salsa did sound good, so I decided to try spicing up my regular "taco salsa" by keeping the tomatoes and still adding the mango, and even some avocado.

The results...

A delicious combination of sweet and spicy.  First you taste the sweet tomatoes, mango, and avocado, then you taste the spicy jalapenos.  And it most certainly tasted awesome with tortilla chips and even on top of my tacos.  Mmmmm, Tacos!  I think I will wait for Fat Butt Friday to confess how many tacos I actually ate.

Salsa

You will need:

6 large tomatoes
1 large green pepper
1/2 large Vidalia onion
1 mango
1 avocado
1-2 jalapenos
 cilantro
1/4 lemon
1/2 lime
1 tsp. minced garlic
salt & pepper

Petite dice all ingredients, squeeze the lemon and lime juice over it all, add the minced garlic, salt and pepper and stir ingredients together thoroughly.  Done!  It's that easy! Now put it in the refrigerator to chill for at least 30 minutes to blend the flavors.

Wanna know the best part?  It's pretty healthy!  Just don't overdo it with the chips.  This stuff is addicting!
