Super Simple Recipe - Sweet Potato Casserole

We received a HUGE box of {sweet potatoes} during Thanksgiving from my mom's significant other. Of course, we don't want them to go to waste so I planned some wonderful recipes that I am going to try so that we can get the maximum use out of these glorious potatoes.

We made this {yummy} sweet potato casserole last night and there was so much left over, we will be enjoying it with dinner again tonight. And guess what? I don't mind!

Sweet Potato Casserole

4-5 lbs. of sweet potatoes
1 cup sugar
1/4 cup milk
1/2 cup softened butter
2 large eggs
1 tsp. vanilla extract
1/4 tsp. salt

1/2 cup brown sugar
1/2 cup pecan pieces
2 tbsp. flour
3 tbsp. melted butter

1 1/2 cup mini marshamllows - optional

Peel and boil sweet potatoes until they are tender. Beat potatoes with sugar, milk butter, eggs, vanilla extract, and salt until smooth. Spoon mixture into a greased 9x13 baking dish. In a separate bowl, combine the brown sugar, pecans, flour, and butter. Sprinkle over top of the sweet potato mixture.Bake at 350 degrees for 30 minutes. Remove from oven and top with marshmallows. Continue baking for an additional 10 minutes or until marshmallows are golden brown. Remove from oven and let stand for 10 minutes before serving.
